Internatonal pancake day

Hi there!

So the past few days I have been incredibly sick, and it is really bothering me. I just hate being sick as much as the next person, but I'm just trying to get through it by binge-watching "Pretty Little Liars" and drinking lots of tea. It really sucks, but since today is the "international pancake day" I decided to treat myself with some delicious and healthy banana and oat pancakes. They are really simple to make and very yummy, so here is the recipe:


What you'll need (1 portion):
The pancake batter:

  • 1 banana
  • 1 egg
  • 1 deciliter/1/2 cup of oats
  • 1 teaspoon of vanilla sugar

The toppings:

  • Some spoonfulls of skyr (if you don't have skyr, you can use greekyoghurt)
  • A pear or any other fruit you prefer

Take your banana and mash it in a bowl with a fork, until it is a smooth consistence (you can also use a blender). Next take your egg and mix it in, and after that your oats and you vanilla sugar.


When you have mixed your batter, you just turn on a pan on medium heat with some butter on it, and fry the pancakes until they turn golden brown. 


Put the pancakes on a plate and serve them with some fresh fruit and low fat yoghurt or any other toppings you like (nuts, berries or honey is also some good choices of toppings, if you don't want yoghurt or fruit).

Healthy & delicious quinoa salad - recipe


Yesterday and the day before that I made this delicious salad I came up with. It's very healthy and nutritious and will fill you up when you're hungry. The salad is made of a layer of quinoa on the bottom, with some fried vegetables on top, salad, avocado, chicken and topped of with roasted almonds and balsamico vinegar. The recipe is also perfect if you want to live a healthier lifestyle, as the new year has begun, or just want some inspiration for healthier food or salads.


Here is what you will need (1 portion):
  • 50ml of quinoa
  • 1 chickenbreast
  • Two vegetables of you choice (I choose bell pepper and zucchini)
  • Three handfuls of salad
  • 1 avocado
  • Almonds
  • Seasoning for your chicken


Start of by boiling your quinoa in a pot with one part quinoa to two parts water. Put a pan on your stove and roast your almonds on high heat (you don't have to use oil on the pan). When you almonds are getting burnt marks and looks roasted enough, take them of the pan, and set them aside. Cut the almonds into smaller pieces.
Next take the pan and fry your chicken breast on medium heat about six minutes on each side. Season your chicken before you flip it on the other side. Slice up your vegetables.When you have fried your chicken on one side and flipped it over, move it to the side of your pan, and fry the vegetables on the other side of the pan. Season the vegetables as well.
When your quinoa is done boiling after fifteen to twenty minutes, take it off the stove and pour the water out, so you're left with only your quinoa. 
Wash your salad and set it aside. Take your chicken breast of the pan when it is browned and no longer raw inside (check it, by cutting in the chicken breast), and slice it into bitesize pieces. When the vegetables are browned and done as well, take them of the heat.
Now take your quinoa and put it on your plate in a flat circle. Next take your fried vegetables, and put them on top. Take your salad and chicken and put it on top of your vegetables. Now take an avocado and slice it into small pieces. Put the avocado on top of the salad as well as the roasted almonds. Now drizzle the salad with a little bit of balsamico vinegar, or any other salad dressing you prefer.

NEW IN - January

Hi there!

January has been a very spoiled month for me but for my bank account. I've bought a lot of things this month, and most of them were kind of expensive. It all started off at christmas, were I got two giftcards to an expensive shoppingcenter, because I really wanted a Ralph Lauren shirt. So I went January shopping with some of my friends, and I guess I kind of went a bit overboard (I guess you could say that I bought some extra christmas presents for myself).
Then my backpack that I bought in Berlin this summer, decided that it could not carry my two kilograms heavy laptop, my books and pencilcase, so the straps of it fell off, in the middle of the hallway at my school. Obviously had to buy a new one (which is much better quality).
But anyways, I bought a few thing that was "needed" and the rest, well, I guess I just craved a lot of things this month (and now it is definitely "saving up"-time!).
